A while back, I got in touch with the <em>Casgiu Casanu<\/em> association\u2014which brings together more than 120 farm-style cheese producers on the island\u2014to learn how to recognize a farm-style cheese and understand its unique characteristics. We\u2019ll discuss production criteria, varieties, and the best wines to pair with these flavors.  <\/p>\n\n<h2 id=\"what-is-the-role-of-the-casgiu-casanu-association-in-corsica\" class=\"wp-block-heading is-cnvs-dropcap-bordered\">What is the role of the <em>Casgiu Casanu<\/em> association in Corsica?<\/h2>\n\n<p class=\"wp-block-paragraph\"><a href=\"https:\/\/www.casgiucasanu.fr\/\" target=\"_blank\" rel=\"noreferrer noopener\">The Casgiu Casanu association<\/a> brings together the island\u2019s farm-based cheese producers. It was founded in 1999 at the initiative of the producers when new hygiene standards established by European regulations were being implemented. <\/p>\n\n<p class=\"wp-block-paragraph\">Thanks to this collaboration, many Corsican farmers were able to continue their operations in the face of draconian regulations that were unsustainable for small-scale producers. By joining forces and drawing on a network of experts (both local and national), the farmers were able to interpret the regulations and propose to local veterinary authorities the provisions that actually applied to our small-scale production, processed directly on the farm. <\/p>\n\n<p class=\"wp-block-paragraph\">We also believe that every shepherd should have a better understanding of their rights, responsibilities, and opportunities to expand their production with greater autonomy. We have a partnership with a local refrigerated transport company, which allows each of our members to deliver to customers throughout the island, regardless of where the shepherd or shepherdess is located. <\/p>\n\n<h2 id=\"what-are-the-distinctive-characteristics-of-corsican-cheeses\" class=\"wp-block-heading\">What are the distinctive characteristics of Corsican cheeses?<\/h2>\n\n<p class=\"wp-block-paragraph\">If we agree on what is meant by \u201cCorsican cheese\u201d (cheese made from milk produced on the island), many of its distinctive characteristics stem from milk sourced from animals that are most often of local breeds (Corsican goats, Corsican sheep), whose primary food source remains the maquis or multi-species pastures.<\/p>\n\n<p class=\"wp-block-paragraph\">We can therefore observe variations in milk (fat content and flavor profiles) depending on the season and, consequently, on the types of feed consumed by the animals.<\/p>\n\n<figure class=\"wp-block-image size-full\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" width=\"848\" height=\"582\" src=\"https:\/\/i0.wp.com\/www.lettera.corsica\/wp-content\/uploads\/2020\/01\/brebis-corse.webp?resize=848%2C582\" alt=\"Corsican ewe\" class=\"wp-image-4967\" srcset=\"https:\/\/i0.wp.com\/www.lettera.corsica\/wp-content\/uploads\/2020\/01\/brebis-corse.webp?w=848&amp;ssl=1 848w, https:\/\/i0.wp.com\/www.lettera.corsica\/wp-content\/uploads\/2020\/01\/brebis-corse.webp?resize=300%2C206&amp;ssl=1 300w, https:\/\/i0.wp.com\/www.lettera.corsica\/wp-content\/uploads\/2020\/01\/brebis-corse.webp?resize=768%2C527&amp;ssl=1 768w, https:\/\/i0.wp.com\/www.lettera.corsica\/wp-content\/uploads\/2020\/01\/brebis-corse.webp?resize=380%2C261&amp;ssl=1 380w, https:\/\/i0.wp.com\/www.lettera.corsica\/wp-content\/uploads\/2020\/01\/brebis-corse.webp?resize=800%2C549&amp;ssl=1 800w, https:\/\/i0.wp.com\/www.lettera.corsica\/wp-content\/uploads\/2020\/01\/brebis-corse.webp?resize=600%2C412&amp;ssl=1 600w\" sizes=\"auto, (max-width: 848px) 100vw, 848px\" \/><figcaption class=\"wp-element-caption\">Corsican sheep have always been a mainstay of Corsica\u2019s agro-pastoral economy.  <\/figcaption><\/figure>\n\n<p class=\"wp-block-paragraph\">Our animals produce 3 to 5 times less milk than some sheep and goats on the mainland. But this milk yields better-quality cheese and, above all, has flavors closely tied to local resources. <\/p>\n\n<p class=\"wp-block-paragraph\">Furthermore, traditionally, Corsican cheese-making methods are known as \u201crennet-based\u201d methods, which produce a mild (non-acidic) whey suitable for making the famous Brocciu\u2014our \u201cnational cheese.\u201d<\/p>\n\n<h2 id=\"how-can-you-tell-if-a-cheese-is-farm-made\" class=\"wp-block-heading\">How can you tell if a cheese is &#8220;farm-made&#8221;?<\/h2>\n\n<p class=\"wp-block-paragraph\">Farm-made cheese is governed by the 2007 Cheese Decree. Cheese may be referred to as \u201cfarm-made <em>\u201d \u201cwhen it is produced using traditional methods by a farmer who processes only milk from his or her own farm on the farm\u2019s premises.\u201d<\/em> <\/p>\n\n<p class=\"wp-block-paragraph\">Thus, the entire process of making the cheese is tied to a farm, that is to say:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>a unique terroir that gives the herd&#8217;s milk its distinctive sensory qualities,<\/li>\n\n\n\n<li>a production method unique to each farmer,<\/li>\n\n\n\n<li>a unique cheese-making environment, particularly the cellar, which allows the product to develop all its distinctive characteristics.<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">A Corsican farm product is truly one that directly reflects its terroir and the producer\u2019s expertise. Non-farm cheeses are generally made from pasteurized or thermized milk, and these heat treatments alter the richness of the milk. <\/p>\n\n<p class=\"wp-block-paragraph\">Farmers also include their contact information on their labels, which allows interested consumers to visit the farm directly to purchase their products. This gives consumers the opportunity to see firsthand how the cheese is produced and how the animals are raised. <\/p>\n\n<h2 id=\"what-are-the-main-categories-of-corsican-cheeses\" class=\"wp-block-heading\">What are the main categories of Corsican cheeses?<\/h2>\n\n<p class=\"wp-block-paragraph\">There are six main types of traditional cheeses in Corsica:<\/p>\n\n<ul class=\"wp-block-list\">\n<li><strong>Sartinese is a<\/strong> pressed cheese aged for about 60 days with a dry rind. It differs from other cheeses in that it is pressed by hand during the molding process to remove as much whey as possible. Other traditional cheeses, on the other hand, are not pressed during molding; they drain naturally.  <\/li>\n\n\n\n<li><strong>Bastelicaccia<\/strong>, which is a short-aged cheese (about 30 days) with a bloomy rind,<\/li>\n\n\n\n<li><strong>Venachese<\/strong>, a washed-rind cheese aged for about 45 days,<\/li>\n\n\n\n<li><strong>Niolu, a<\/strong> washed-rind cheese that is salted more heavily during the draining process so it can be aged longer,<\/li>\n\n\n\n<li><strong>Calenzana,<\/strong> which is also very salty when drained and, most importantly, is aged in closed wooden crates for 6 to 12 months. The flavor of the cheese intensifies with the length of the aging process. <\/li>\n\n\n\n<li>Finally, there\u2019s also <strong>fresh cheese<\/strong>. This cheese is made the same way as the unpressed cheeses mentioned above, but it\u2019s sold to consumers on the evening it\u2019s made or the next day to be enjoyed on a cheese platter or in a salad. It\u2019s a very mild, refreshing cheese. For cooking (migliaccioli, cheese fritters, etc.), it\u2019s best to use fresh cheese that\u2019s been made for two days, as it will be easier to work with.   <\/li>\n<\/ul>\n\n<figure class=\"wp-block-embed is-type-video is-provider-youtube wp-block-embed-youtube wp-embed-aspect-16-9 wp-has-aspect-ratio\"><div class=\"wp-block-embed__wrapper\">\n<iframe loading=\"lazy\" title=\"A fiera di u Casgiu, la foire du fromage de Venaco\" width=\"1200\" height=\"675\" src=\"https:\/\/www.youtube.com\/embed\/pshynUgxCEU?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe>\n<\/div><\/figure>\n\n<h2 id=\"what-are-some-good-pairings-for-island-cheeses\" class=\"wp-block-heading\">What are some good pairings for island cheeses?<\/h2>\n\n<p class=\"wp-block-paragraph\">Together with the <em>Slow Food <\/em>association, <em>we <\/em>organize tastings\u2014particularly at <em>A Fiera di u Casgiu<\/em>\u2014that pair Corsican wines with Corsican farm-fresh cheeses.
